I'm looking on rock auto and there are 80" rear drive shafts and 81 and 80 3\16 and 81.125

1 inch is a lot! Why the variation?
Who made the OEM one for Nissan?

There are several different ways to spec the length of a driveshaft, depending whether it's free or in situ and whether the shaft has yokes. Go by equivalence, if an aftermarket part claims it's a direct equivalent for a Nissan part number then it will almost certainly fit the application. Shopping by make-model-year instead of OEM equivalence is a good way to get hosed.

The original gen1 Rogue shaft was 37000-JM100, that was superseded by 37000-JM10A and 37000-JM13A. They'll all fit in the same hole, and anything which claims to replace them should also fit.

Rock auto showing SKP SK946236 matching 37000jm100, 37000jm10a and 37000jm14a

Which is weird to me. Is 14 the same as 13? Lol

The Nissan OEM parts sites make it seem like I could rebuild it with new u joints? I don't think that would end well at 160k miles though lol

The U-joints are staked, you can replace them but it takes some machining and the operation is anything but simple. I found the 14A, it's a later supersession that didn't show up when I checked the catalog for your '11. They're all the same part.
