This exact same thing has happened to me on several occasions. Try rotating the little dash light wheel switch at the lower left side of the dash. Rotate it up to turn the dash lights brighter.
Sometimes, your knee may brush against this little wheel when you get in, rotating the switch all the way down. When the wheel is turned all the way downward, the dash lights will turn off when you turn on the headlights. This sometimes happens to me whenever my daughter has been driving the car, the seat is moved forward and I have a tight squeeze getting in, and I brush against the dash light adjuster wheel switch.
