Currently 8XX miles into the breakin period and have a 226 mile round trip. Coming this Tuesday. Will I be okay driving it on this trip?

Another thing. I've gotten about 280+ miles and used 3/4 of a tank. Is this good gas mileage? I've always filled up when I reach 1/4 of a tank remaining.

It will be ok; don't push it too hard and don't load it with 5 bodies and luggage

This depends on how much gas you are filling it to the full, but I assume right now you have something between 30-32 mpg.

I usually try to keep revs below 3000 and always keep them below 4000. I usually put 9-10 gal in.

Don't cruise at the exact same speed for long periods of time. Vary what you have your cruise set at... go a little below the speed limit for 20 or so miles, then speed up a bit, cruise another 20, slow back down, etc.

The break-in procedures don't say that long trips are bad, just don't maintain the same speed the whole time.

Unfortunately, recently, I've been hitting that mark at 250 miles on the odometer.

It's not safe to say anything about fuel economy until you actually fill up and calculate it. Like I said, all gauges will read a little differently.

Well using a ballpark of 280 miles and 9 gallons I'm getting 31 mpg. I believe the fillup was closer to 290, but I'd rather round down than up.
