When the parking lights or headlights are turned on, do the white markings on the headlight switch knob and on the wiper switch knob light up along with the defog, climate control, and the rest?

On the knobs themselves? No. That is just white paint.

Ok, thanks. Saves me from tearing them apart to replace non-existent bulbs!

No problem. The knobs are pretty easy to take off. The smaller wiper knob pulls straight out and the other 2 larger knobs have small screws in them.
