My wife's I35 keeps losing oil. I don't know if this is normal burning for the 3.5L engines or if I am leaking oil. There are no signs of significant drops on the ground, but I am noticing oil around one of the engine gaskets.

What gasket is this and do you think this is the problem? Could the PCV valve be contributing to this? What would it cost to replace the gasket?

That's the valve cover gasket. There is a decent chance that what ever oil your adding might be spilling and ending up there, so I'd pop off the decorative cover and make sure that's not the case. Mine went through a little over a quart every 1000 miles.

Here's a link to one of my postings about high oil consumption.
