1997 Nissan D21 Hardbody

I have had a nightmare with my truck recently. It started out of no where. I have very bad fuel mileage and cannot exceed 2500 rpms. It drives the same with or without the MAFS plugged in.The check engine light is on and the only code reported is P0100. I have replaced it with a new MAFS, regrounded and tested wires with a multimeter, all to no avail. About 2 years ago I had an aftermarket CAT put in because someone stole mine. That's the only work that I've done, but thought maybe the O2 Sensor could cause this issue, if so how would I test that? I have tried probing for continuity on ECM pin 47/48 and do not get continuity, but believe that's user error. I want to probe Joint connector or somewhere further in the harness than at the engine, but not sure where to probe. I'm colorblind and the colors mess with me, so if anyone knows pin numbers of where to test the MAFS as close to the ECM as possible, I'd be very happy. I'm stumped.

Thanks in advance.

I got my OBD scanner today and am getting very high and very low data from the MAFS. The truck will stall when the MAFS is plugged in.

Could it be my oxygen sensor or injectors?
