are the connectors in the coilpacks solid? If not get some new ones. With time and heat the connectors tend to break and might get loose when you get on it.

Sounds like a failing injector coil to me. They'll work intermittently for a while before failing completely. Check the resistance of the injectors using a multimeter and disconnect coil pack connections one at a time to verify the problem cylinder. Six new ones that I installed a while ago read about 11.5 ohms and spec is between 10 and 14.

If you can catch it while it's doing it, try this technique to narrow it down.

As it is missing while at idle, pull the connector for the coil pac and see if there is any change in the idle then plug it back in. Do this for each coil pac, the bad one (or bad connector) will have no effect on the idle. If each coil pac effects the idle, then with all coil packs plugged in, disconnect each fuel injector one at a time to see their effect on idle. Again, the bad one will have no effect on idle when disconnected.

If all that doesn't work, check the connection at the ignition amplifier.

On a side note, we replaced several fuel injectors in our '92 300ZX.
