I recently removed my plenum, fuel rail, injectors, etc.
To first relieve pressure on the fuel system, I started the engine and then pulled the fuel pump fuse. It didn't take long for the engine to die. Then I disconnected the battery and the fuel line connections to the plenum/fuel rail, and started pulling things apart.
The next day (a warm one) I lifted the hood of the car and found things soaked in gasoline, so I attached a hose to loop the fuel line connections and loosened the gas cap (the thing hissed, indicating pressure).
During the time that you had the one injector out of the engine, there was an opening in the system and gas must have been flowing, at least into the one cylinder.
If the two re-used o-rings weren't damaged, compressed and age/temperature-hardened, they might be ok, BUT the fuel rail openings and inlets to the injectors sit between the two o-rings. If a small o-ring is bad, gas will leak into the cylinder (not visible) and if a big one is bad it will leak onto the intake manifold (visible).
