I noticed that my “distance to empty” display has been erratic the last few days. The fuel gauge is steady and appears to be fine. But the “distance to empty” display on the dash will drop by 20 miles after I drove only a couple of miles. Any insights on this weird problem?

On the older stuff the DTE will bounce around quite a bit with motion and tank temperature because the ECM and cluster are calculating it minute-to-minute. My '04 Altima will frequently get a fuel lamp and very low DTE at startup and then the mileage rises and the lamp goes out after a little driving. Later models calculate DTE based on recent driving history and tend to be steadier, but most require at least 5 gallons and the ignition to be off while filling or the number gets screwed up. That's the case with the wife's '13 Altie and most other models until '20. They finally unscrewed most of the weird behaviors with the '21 Rogues and '22 Pathies.
