I got a quick question. Does everybody's A/C kick on when they switch their system to Defrost even if the temp dial is turned all the way to Hot? Is this normal or is there something wrong with my car.

It's meant to work that way. The AC reduces the amount of moisture in the vehicle which, for most of us is a good thing when using the defroster.

fyi, the air conditioning only goes on with the heat if you have chosen one of the "window defrost" positions on the dial. Otherwise it doesn't 'kick-in'. If you don't want the air on when in one of the "window defrost" positions is chosen, then just depress the Air button.
