Coolant - I'll assume the 2008 Altima uses long-life coolant. My previous car was a '98 Olds Intrigue which used Dexcool, which GM claims to last 100K miles, supposedly better for the environment. That stuff is a total disaster. In the 3.5 years that I've had the Olds, this coolant's had to be replaced 3 or 4 times. I think Nissan's long-life coolant is a completely different formulation, but I would recommend being careful with it, and be sure to follow all of Nissan's directions to the letter. If you put in any water, use distilled water. The service manual says "After 60,000 miles (96,000 km) or 48 months, replace every 30,000 miles (48,000 km) or 24 months."
Brake fluid - Nominally, brake fluid should be every 2 years. The service manual doesn't say anything about it, though. Do you have CVT or manual transmission? If it's a manual, I would be more careful to do it often, because of the clutch hydraulic system. The clutch system looks to me like a poor design that doesn't allow any way to really flush the old fluid out of the slave cylinder, which makes it more important that the fluid is kept as fresh and clean as possible.
