95 S14 funky cooling issue Please Help!!!

Ok here's the story, it's a 95 S14 has roughly 110K on the engine. New radiator, new water pump, d/k how old the thermostat is. There's no cooling leaks, system is bled as I didn't have any issues before.

symptoms: When I start the car for the first time for the day after I let it warm up and drive for 5-10 minutes it starts to overheat, however if I let it get to the H on the gauge and then stop and shut off car for a couple minutes when I start the car the gauge immediately drops and then everytime I turn off and restart the car for the rest of the day (even when its cold) it runs waaaaay below normallike on barely above the C or halfway to where it needs to be.

Funny thing is it only does this when it's cold out ie under 60 degrees. and its a OEM radiator not an aluminum.

Hints suggestions, I'm replacing the thermostat this weekend and flushing the system but I know it's going to do the same thing cause it did it last winter.

you said it did it last winter? maybe u have an incorrect antifreeze mix.

I'm using the 50/50 premixed stuff you can buy, and as far as the cap goes, it's a new cap, got it when I replaced the radiator.

I think it's the thermostat, either that or the temp sensor for my gauge just doesn't like cold weather, cause it went all summer without overheating or overcooling, the temp gauge stayed where it was supposed to. It only seems to do this in the winter. Also my heat works fine, but if I have it on full blast when it's overheating it doesn't seem to do anything.

I'm confused.

it could be ur temp stat or maybe ur sensor u can test with volt meter mine does that sometime it goes crazy if ur car was overheating when u turn it off u can hear a gulping noise in the over flow tank and radiator indicating too much pressure or over flow when ur car over heats if not than its a sensor or stat.
