You're fine with holding off on the oil change until at least 3,750 miles.
If your car is just sitting there parked, it's different than driving it every day for 6 months and still not hitting the 3K mark.
I know people (fanatics) with exotic cars and they change the oil once every 18 months, but they only put about a 1,000 miles a year on their cars and they sit in the garage most of the time.
Oil does not break down on its own, if that was the case, quarts of oil would have expiration dates on them. It does however start to collect condensation and possibly other contaminates from sitting in the engine and not being run up to temperature often.
At a minimum, I would say in your case, change your oil once a year or 3,750 miles, which ever one comes first.
