Someone wants to buy my stock M wheels, but is concerned of the offset. Will they fit ok?

As far as I recall, the M has very deep offset that makes it difficult to use it's wheels on even other RWD Nissans. I doubt they would fit an I35.

Do you know the size and offset of the wheels?

MinisterofDOOM is correct IIRC...the Y50 has a weird offset and its wheels really aren't compatible with much else.

I don't know what year Max you are talking about here but someone I know has 06 M45 wheels on an 03 Maxima. They ride pretty rough but it looks good.
