Occasionally, just as the car slows to a stop, in the last 10' of light braking, our '11 G37 "pulls" one direction, and the next time, it might pull the other direction. When applying the brake more aggressively, the car stops straight and true......Something leaking onto the pads?

Could be tire/alignment related since it pulls either way. Something else to consider at least. i doubt it's something leaking onto the pads themselves.
